Alto Adige Pinot Grigio, Peter Zemmer
The Pinot Grigio grapes have been carefully selected from the best vineyards on the valley floor and steep slopes near the vineyard estate for this bottling. The vines flourish here on stony, sandy, and extremely chalky soil; yields are extremely low, and climatic conditions are extremely challenging. Only the finest grapes are selected, and therefore the end result is an outstanding wine.
Once the grapes arrive at the winery, they undergo a gentle pressing followed by clarification by means of the natural settling of sediments. This is followed by alcoholic fermentation using natural yeast strains at a controlled temperature of 18°C in stainless steel tanks. The wine is then left in contact with the lees (yeast particles) for a number of months which contributes to the texture and complexity of the wine.

An aromatic Pinot Grigio from Alto Adige. The wine shows notes of ripe white peach, lemon zest, and green melon. The fruit is nicely complemented by savory bread crust, almond skin, and hay. The wine is bone dry, medium-bodied with pleasant phenolic bitterness and mouthwatering acidity. |
