Nuits-Saint-Georges Rouge
It was at the beginning of the 19th century that Mr Honorè Gavignet, a winegrower at Domaine de la Romanée Conti created his own domaine in Nuits-Saint-Georges in the heart of Brugundy . Honoré, a man of the earth was to transmit his passion to his son Maurice Gavignet. Father and son developped the business on the family property, the current Domaine headquarters. Since that day, the love of a well accomplished work has allowed 4 generations to succeed one another from father to son, down to Arnaud Gavignet, the founder's great-grandson.
The grapes are hand-picked, 100% de-stemmed and placed in vats. After a prefermentation in vats at low temperature, the alcoholic fermentation begins. Punching of the cap is carried out once a day during this fermentation. The wine is then raised in oak barrels for 16 months (with 25% of new oak). It is racked up to three times during this period. It is bottled after fining, but without being filtered to ensure all the aromas are fully preserved.
