Wines that Sing Spring & Inspire Entertaining


Spring is here! It is a season full of welcomed change: a shift in temperature, a shift in daylight hours, and a shift in our preference of wine styles. It is the time of year where we often begin to enjoy different wines although, we admit, rosé season is every season around here!

As the days grow longer there is more time in the day to enjoy great wine! To celebrate, our sommeliers are offering a fun list of Spring Sippers to help you restock your cellar. These wines are perfect for warmer weather, offer great additions to the Easter dinner table and are designed for everyday enjoyment. 



An incredible winery led by the lovely Ottavia Giorgi di Vistarino. She pays unwavering respect to her land and upholds the winemaking traditions that have been in her family for over 500 years.  This is a vibrant Blanc de Noir, a white wine produced from red grapes, with crisp orchard fruit and tons of salinity. An ideal wine for scallop ceviche and your first patio day of the season.

Many will have had their first experience with the Savatiano grape variety when you tasted the famed Greek wine, Retsina. This wine is a delicate expression with the classic characteristics of pine resin, fresh bay leaf and an unparalleled minerality. Find yourself a piece of feta cheese, or pair it with a grilled side of salmon, and hopefully you will be able to enjoy it while sitting on a dock!

ATTIS Bodegas y Viñedos is a family-run winery in Val do Salnés, Spain owned and operated by two brothers, Robustiano and Baldomero Fariña.  Their focus celebrates local grape varieties grown adjacent to the Atlantic ocean and showcases the potential for these indigenous wines. Xion Cuvée Tinto is a perfect example of this, it is a red wine that will make you crave the seaside.  A blend of Pedral, Sousón, and Espadeiro it is deep, iridescent purple in colour.  The wine is filled with fresh red and dark fruit, cracked black pepper and a notable crushed oyster shell minerality.  Chill this red wine to cellar temperature and enjoy with charcuterie or steamed clams in a spicy tomato sauce.

Tombé du Ciel is a fresh, fruit-driven blend of two local grape varieties, Prunelard and Braucol, and takes its name from Nicholas Lebrun’s nod to biodynamic winemaking: here is where the earth and the sky are the centre of their work at L’Enclos des Braves.  In the glass there are aromas of freshly crushed berries with underlying notes of savoury dried herbs and the forest floor.  It is the perfect answer for your first barbeque of the season; best enjoyed with a little chill!
